Ingredients:
Butter
2 slices whole wheat bread
1 tsp Basil Pesto
1 tbsp Olive Oil Mayonnaise
Pinch Himalayan Rock Salt
1 slice Provolone
4 slices roasted chicken breast
Shaved onion
Red Lettuce
Thin cliced tomatoes
1 pickle spear
Method:
In a frying pan over medium heat, brown enough butter to cover the bottom of the pan.
In a small bowl, mix the mayonnaise, pesto and salt (to taste). Spread it onto one side of both pieces of bread. Fry them in the browned butter until the exterior turns a rich, golden brown. Remove from pan and place on a cutting board.
Shave the onions (preferably on a mandolin) and lay on one of the pieces of bread. Place the slice of Provolone over top and broil until the cheese has melted. Next, lay the chicken on the melted cheese, followed by the thin sliced tomato and, finally, the red lettuce. Place the second piece of bread on top, slice diagonally,
Serve with a pickle spear* (optional)
