Rural earth ponies enjoying a bite of grass when nopony is looking, unicorns enjoying a healthy nibbling of a bush.. and then there are the pegasi.
Obviously they would make use of their flight to stick as far above ground as they can. Nothing like a nice tree to perch on, with a good open view to the sky to keep watch, and enjoy the leaves the grounded ponies can never hope to reach.
Especially the fresh leaves and buds in the tree top are nice and juicy and just the right fuel before a flight.
These are fun to make, wonder where I can take this next

Looking at Equestria's general flora, I'll agree probably no reason for them to try and adapt to eucalyptus except for some diet fad
